  • To create the Southern soul food spice rub, mix the chicken seasoning with the roasted garlic and herb spice in a small bowl.
  • Next, rub the seasoning mixture all over the whole chicken to ensure it’s well coated.
  • Pour chicken broth into the inner pot of the Instant Pot and place the whole chicken on the trivet rack. Using the trivet rack handles, carefully position the chicken inside the pot with the broth.
  • Close the Instant Pot lid, ensuring the valve is up in the sealing position, and set it to pressure cook on high for 25 minutes.
  • Once the cooking time is complete, allow for a natural pressure release for at least 15 minutes.
  • To open the Instant Pot lid, move the valve to the venting position and manually release any remaining pressure, if necessary.
  • Baste the chicken by using a large spoon to scoop broth from the inner pot and pour it over the top of the chicken.
  • Use the handles of the trivet rack to carefully remove the chicken from the inner pot. Place the chicken on a cutting board for carving, and slide the trivet rack out from underneath.
  • Optionally, you can reserve the remaining chicken broth in the inner pot to pour over the chicken when serving. I also enjoy drizzling the broth over rice. Enjoy!
