Cook sweet plantains quickly in the Instant Pot in half the time it takes to fry them on the stove, and still get that sticky, syrupy finish and those crispy edges of pan-fried plátanos!
½tablespoonbutterunsalted (Use a butter swap to make it vegan)
½cupbrown sugar
2tablespoonscinnamonor 2 cinnamon sticks
Instructions
Start by cutting off the ends of each plantain. Then, carefully score them lengthwise to remove the thick outer peel, ensuring you don’t cut too deeply into the plantain flesh.
After removing the peel, slice the plantains diagonally to create beautiful golden pieces.
Remove the Instant Pot lid and turn on the sauté setting for 20 minutes. (Although you will not use all of this time. I like to have the extra minutes for the time it takes for the sauté to become active.)
Add the water to the stainless steel inner pot. Then add the plantain slices, butter, brown sugar, and cinnamon (or cinnamon sticks).
Sauté with the Instant Pot lid off for about 5-8 minutes until the plantains are softened and golden in color.
Turn off the Instant Pot, remove the inner pot from the burner, and transfer the cooked plantains to a serving dish. Then, serve right away and enjoy!
