My Southern brown sugar–glazed carrots are simmered and glazed on the stovetop with butter, herbs, and rich brown sugar. Tender, glossy, and infused with sweet-savory soul in every bite!
8carrotsskin on, 8 whole organic carrots or 4-5 large carrots
1tablespoonunsalted butter
½cupchicken stock(Replace with water or vegetable stock to make vegetarian-friendly)
4-5sprigsfresh thyme
½teaspoonthymedry herb
½cuplight brown sugar
¼teaspoonsalt
¼teaspoonblack pepper
Instructions
Melt the butter in a skillet over medium heat for about 1-2 minutes.
Next, add the carrots, stock, fresh and dried thyme, brown sugar, salt, and pepper.
Simmer for 5 minutes, stirring occasionally.
Then, cover the skillet and cook for an additional 20 minutes until the carrots are tender and glossy, removing the lid to stir occasionally. Finally, serve immediately and enjoy!
