  • 4 teaspoons baking powder
  • 2 eggs
  • 1 cup milk
  • ½ cup buttermilk (Can substitute with 1 cup of heavy whipping cream)
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon salt
  • ½ cup butter melted
  • cooking spray

Instructions

  • In a medium-sized bowl, whisk together the dry ingredients: flour, baking powder, and salt, and set the mixture aside.
  • In a separate medium-sized bowl, whisk together the eggs, milk, buttermilk, brown sugar, cinnamon, vanilla extract, and melted butter.
  • Next, pour the dry ingredients into the egg and milk mixture and combine everything using an electric mixer until well blended.
  • Lightly coat the waffle maker with cooking spray.
  • Using a large serving spoon or ladle, pour the waffle batter onto the griddle of the waffle maker.
  • Cook the waffles according to the instructions for your specific waffle iron (approximately 5-7 minutes), as cooking times may vary based on the number of waffles you can make in each batch.
  • Serve this recipe in the style of Roscoe's Chicken 'N Waffles, topped with fried chicken and syrup, of course!
