Jamaican cabbage is a vibrant side dish of tender cabbage stir-fried with carrots, onions, and island spices for a burst of sweet, savory, and subtly spicy flavor. Light, colorful, and full of Caribbean "flava!"
1green cabbage3-4 pounds, coarsely chopped or shredded
½ carrotchopped or shredded
½onionchopped
1Scotch bonnet pepper*Optional
½teaspoonthyme5-6 fresh sprigs
1stickbutterunsalted
1cupchicken broth(or vegetable broth to make this dish vegetarian)
1tablespoonsalt
½teaspoonblack pepper
½teaspoonOld Bay seasoning
½teaspoongarlic powder
1teaspoonapple cider vinegar
Instructions
Cut out the core of the cabbage and coarsely chop the leaves using a food processor or a knife. (I recommend removing the outer layer of cabbage leaves and discarding them before chopping.)
Turn on the stovetop to medium heat and add the butter to the pan.
Once the butter has melted, add the chopped cabbage, carrot, onion, optional Scotch bonnet, thyme, broth, apple cider vinegar, Old Bay seasoning, garlic powder, salt, and pepper to the pan.
Cover the pan with a lid and let it simmer for about 10 minutes, stirring occasionally.
After 10 minutes, remove the lid and continue cooking the cabbage uncovered for about 15 minutes. Be careful not to let all the broth evaporate to prevent the cabbage from becoming dry. Then, serve and enjoy!
