Southern Pulled BBQ Chicken Recipe The Soul Food Way
Southern pulled BBQ chicken is made by smothering the chicken in soulful seasonings and a rich, smoky, and sweet barbecue sauce, then slow cooking it until it’s fall-apart tender, before shredding it into juicy strands.
Slowcooker Or an Instant Pot multicooker on the 'slow cook' setting
Electric stand mixer with a flat beater *Optional, to shred the chicken quickly
Ingredients
2poundschickenthawed, preferably boneless, skinless chicken thighs or chicken breasts
1tablespoon poultry or all-purpose seasoningFamous Dave’s Country Roast Chicken Seasoning, or similar
1tablespoongarlic and herb seasoningWeber Roasted Garlic & Herb Seasoning, or similar
¼cupbrown sugar
1 ½cupsBBQ sauce
2tablespoons Worcestershire sauce
1teaspoonapple cider vinegar
½cupchicken broth
Instructions
In a small bowl, combine the chicken seasoning with the garlic and herb seasoning.
Rub this seasoning mixture evenly over the chicken pieces, then set them aside.
Next, in a medium-sized bowl, mix together the BBQ sauce, Worcestershire sauce, apple cider vinegar, and brown sugar.
Smother the seasoned chicken with the BBQ sauce mixture.
Pour the chicken broth into the slow cooker and then place the sauced chicken inside.
Cover the slow cooker with its lid and cook on high for 3-4 hours or on low for 6-8 hours. Alternatively, you can set your Instant Pot multicooker to the 'slow cook' setting and cook for 4 hours.
Once the chicken is cooked, you can shred it by using a knife, pull it apart by hand with a fork, or use a stand mixer for easier shredding. Then, serve and enjoy!
