This recipe is a fresh take on a classic Southern dish with an added twist of soul food seasonings and flavors. After soaking and boiling the dry beans, the diced vegetables lay the groundwork. Ingredients

  • 1 pound navy beans dry
  • 8 cups beef broth use vegetable broth for vegetarian and vegan friendly beans
  • 1 cup yellow onion diced
  • ½ cup green bell pepper diced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons molasses
  • ½ cup brown sugar
  • ¾ cup barbecue sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cinnamon ground
  • 1 teaspoon mustard ground

Instructions

  • Remember to soak the beans by adding enough cold water to cover them about 3 inches above the beans and letting them soak for 8 hours or overnight. Pro tip: Quick-soak your beans by adding them to a large pot of boiling water. Boil for five minutes, remove from the heat, cover the pot, and let them sit in the hot water for an hour for a quick soak.
  • When the soaking is finished, discard the water and rinse the beans.
  • Next, pour the broth and the beans into a large pot and bring to a boil over high heat.
  • Then, reduce the heat to medium-low, cover, and let the beans simmer for 1 hour.
  • While the beans are simmering, mix the tomato paste, Worcestershire sauce, molasses, brown sugar, barbecue sauce, salt, pepper, garlic, smoked paprika, cinnamon, and ground mustard in a medium-sized bowl and set the mixture aside.
  • Once the beans have finished simmering, turn off the stovetop, drain using a colander, and reserve the broth from the beans.
  • Heat the oven to 375 degrees F.
  • Pour the cooked beans into a 9x13 casserole dish, baking dish, or a large cast iron skillet and stir in the chopped onion, bell pepper, and the set-aside mixture.
  • Stir in 1 cup of the reserved broth from the beans.
  • Cover with the baking dish's lid or aluminum foil, and bake the beans in the oven for 10 minutes.
  • Then, reduce the oven temperature to 200 degrees F and bake for 6 hours, stirring the beans halfway through after cooking for 3 hours.
