Ingredients

  • 6 slices bread
  • 3 eggs large
  • cup milk
  • 1 tablespoon sugar granulated
  • 1 teaspoon vanilla extract
  • 2 cups Cap'n Crunch cereal

Instructions

  • Place the Cap’n Crunch cereal in a zip lock bag and crush it using a rolling pin or your preferred kitchen tool. It's fine if the pieces are not uniform; a mix of large and small pieces works well.
  • Pour the crushed cereal into a shallow dish.
  • In a shallow bowl, mix together the eggs, milk, sugar, and vanilla extract.
  • Next, dip your bread slices into the egg mixture. Ensure that the slices are coated but not overly saturated.
  • Cover one side of each bread slice with the cereal. You can dip the slice back into the egg mixture if you need to help the cereal adhere.
  • Place the coated toast on a large baking sheet and bake at 350 degrees F for 10 minutes or until golden brown and the cereal coating transforms into a crispy, golden shell that encapsulates the bread's soft interior.
  • Once baked, remove the toast from the oven and let it cool for a minute, then optionally sprinkle with powdered sugar, serve with maple syrup or fruit topping and enjoy!
