Slice watermelon into 1/2″ wedges (rinds on or off).
Lightly drizzle each side of the watermelon wedges with olive oil.
When the grill is hot, add the watermelon and grill for 2-3 minutes on each side or until light grill marks appear.
Remove and serve on a platter drizzled with the balsamic vinaigrette and garnish with fresh mint and feta cheese.
3. Olive oil & sea salt grilled avocado
3 Ingredients: avocado, olive oil & sea salt
Cut avocados in half or quarters and remove the pit.
Drizzle each half with olive oil.
Sprinkle each with sea salt.
Grill with the cut side face down for 2-3 minutes.
Remove avocado from the grill, serve and enjoy!
4. Cinnamon & honey grilled pineapple
3 Ingredients: pineapple, cinnamon & honey
Cut the rind off of the pineapple and slice or cut into wedges. I recently stumbled upon this pineapple slicer (see it in the post). It’s like magic, and you’ll never slice a pineapple manually again!
If manually slicing, cut the pineapple about 1/2″ thick.
Drizzle each side with cinnamon.
Then drizzle each side with honey.
Place on the grill and grill each side for 2-3 minutes.
Remove your pineapple from the grill, serve and enjoy!
