Ingredients

Cookie Ingredients

  • 1 ¼ cup flour
  • ½ cup cornstarch
  • cup powdered sugar
  • ¾ cup butter *For the cookie dough to set properly, it is crucial that the butter is softened and not melted.
  • 1 teaspoon lemon peel grated
  • 1 ¼ tablespoon lemon juice

Lemon Glaze Ingredients

  • 1 oz butter melted
  • ¾ cup powdered sugar
  • 1 tablespoon lemon juice

  • Preheat the oven to 350 degrees Fahrenheit and grease a baking sheet, then set it aside.
  • In a medium-sized mixing bowl, thoroughly combine all the ingredients.
  • Using your hands, roll the mixture into 1-inch balls and place them on a greased cookie sheet, ensuring there is a 2-inch space between each one.
  • To flatten the cookies, gently press the bottom of a drinking glass onto each ball.
  • Bake the cookies for 12 minutes, or until the edges are lightly browned.
  • Remove the cookie sheet from the oven and transfer the cookies to a wire rack to cool for at least one hour before frosting.

Lemon Glaze Instructions

  • To make the frosting glaze, combine all the glaze ingredients in a bowl and mix well with a whisk to eliminate any lumps from the powdered sugar.
  • Once the cookies have cooled, frost them using a dollop of frosting applied with a spoon or spatula. After about 6 hours, the frosting glaze will harden, allowing you to stack your lemon meltaway cookies!
  • Finally, sprinkle the cookies with lemon zest for a finishing touch, then serve and enjoy!
