Then come the aromatics: garlic, finely chopped onion, and bell pepper, bringing texture and a hint of sweetness that deepens as the meatloaf bakes.

But what really sets it off? The seasoning. We’re talking onion powderpaprika, thyme, basil, parsley, seasoning salt, and black pepper. A generous drizzle of Worcestershire sauce adds depth of umami. How to know meatloaf is done

There are a couple of reliable ways to tell when your meatloaf is done. The most accurate method is to use an instant-read thermometer. Once the internal temperature reaches 155 degrees F, you’ll know the center is fully cooked. 

You can also check visually by slicing into the middle, and if the meat is browned all the way through with no pink remaining, it’s ready to serve. While a thermometer gives the most precise reading, this simple slice-and-check method works just fine too.

Ingredients

  • 2 pounds ground beef 80/20
  • 1 tablespoon seasoning salt your favorite all-purpose seasoning salt
  • ¾ cup ketchup
  • ¼ cup brown sugar
  • ½ cup bell pepper diced
  • 1 cup yellow onion diced
  • 1 cup bread crumbs Panko bread crumbs
  • ¾ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 large egg
  • 1 teaspoon garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon thyme dried
  • 1 teaspoon basil dried
  • 1 tablespoon parsley dried
  • 1 teaspoon paprika
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 350 degrees F, grease the loaf pan, and set it aside.
  • In a small bowl, mix together the ketchup and brown sugar until the sugar dissolves, then set the mixture aside.
  • Season the ground beef with all-purpose seasoning and set it aside.
  • In a large bowl, mix the breadcrumbs and milk.
  • Then, add the seasoned ground beef, diced bell pepper, onion, Worcestershire sauce, egg, garlic, onion powder, thyme, basil, parsley, paprika, and black pepper to the bowl.
  • Mix all the ingredients together gently until well combined. You can mix by kneading with your hands, stirring with a spoon, or using a stand mixer on low speed.
  • Transfer the meat mixture to the greased loaf pan, and evenly spread the prepared ketchup glaze over the top of the meatloaf.
  • Bake the meatloaf in the preheated oven for 1 hour, or until it is no longer pink in the center. Once done, slice, serve, and enjoy!

    Can you use tomato sauce instead of ketchup? What about oatmeal instead of bread crumbs? How much of each?

      Use the same amount as you would ketchup or bread crumbs. The only concern is that depending on the size of your oatmeal flakes if they are large, you may notice their texture in the meatloaf.
