This cornbread recipe with corn is my go-to for a soul food Thanksgiving menu, Christmas dinner, and Sunday Southern dinners all throughout the year!

Cornbread enthusiasts everywhere love this savory and sweet cornbread recipe with corn. 

I’ve shared this recipe on recipe note cards and have handed it out so much offline. Now I’m finally formalizing it for easy online distribution!

What is corn in cornbread called?

Corn in cornbread is called cornmeal.

And with the addition of other soul food-inspired ingredients, you get a buttery flavor (thanks to the melted butter), rich creaminess (from the whipped cream), and hints of sweet yellow kernels of corn.

My cornbread recipe is the perfect bread for dishes like tangy fresh cranberry sauce to yummy sweet potato pie!

Then, combine the cornbread mix with delicious creamed corn (canned creamed corn will also work!). Finally, cream cheese and granulated sugar add just the right amount of sweetness to enhance the flavor of this once basic box dish!

What if you still want to make this cornbread recipe from scratch?

You could interchange yellow cornmeal for white. 

The taste is similar and good, but you should know that yellow cornmeal is sweeter than white. This is because one comes from white corn kernels, while the other is from the sweeter yellow kernels of corn.

  • 4 tablespoons of unsalted butter
  • ¾ a cup of creamed corn (fresh corn creamed, or canned)
  • 1 tablespoon of granulated sugar
  • ⅓ cup of whipped cream cheese

Instructions for skillet cornbread with corn

  1. Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter). 
  2. Place the butter in an 8-inch baking pan or skillet and melt in the oven for approximately 5 minutes.
  3. While the butter is melting, combine the Jiffy cornbread mix, creamed corn, sugar, and cream cheese in a medium-size mixing bowl.
  4. Pour the melted butter from the baking pan into the mixing bowl and mix all the ingredients together. 
  5. Pour the cornbread batter into the baking pan or skillet.
  6. Bake at 350 degrees F. In the conventional oven, bake for 25-30 minutes. In the Instant Pot Omni Plus oven, bake for 23-25 minutes. 
  7. Serve cornbread with corn warm, and enjoy!

Yellow cornmeal is the perfect choice for this recipe which gives the cornbread a beautiful golden-brown color and delicious grainy texture. Still, you can substitute yellow cornmeal with white cornmeal. You’ll enjoy the same delightful taste; the only difference would be the color of the cornbread and a slightly less sweet taste.

If using a box mix like Jiffy, you’re already using yellow cornmeal!

 

What is the ideal cornbread texture?

  • Ingredients: 1 cup of medium grind cornmeal, ⅔ cup of all-purpose flour, 2 teaspoons of baking powder, 4 tablespoons of unsalted butter, 1 cup of creamed corn (fresh corn creamed, or canned), 1 tablespoon of granulated sugar, 6 oz. of whipped cream cheese
