As a proud Southerner, I’ve always loved the classic Jiffy Corn Muffin Mix for its quick preparation and comforting flavor. However, you don’t have to limit yourself to the simple recipe on the box. By adding sour cream to the mix, you can elevate the cornbread into something truly special. It’s one of the best ways to enhance a box of Jiffy Mix!

What are the benefits of adding sour cream to Jiffy cornbread?
Adding sour cream is a simple tweak that results in moister, richer cornbread. This variation combines the comforting essence of the original recipe with a luxurious texture. The beauty of this addition lies not only in its enhanced flavor but also in its uncomplicated nature, making it easy for anyone to jazz up the original box recipe and add a touch of comfort and softness.

Different ways to customize Jiffy cornbread with sour cream
My Jiffy cornbread recipe with sour cream is especially noteworthy because it doesn’t require eggs. Instead, the sour cream serves as a binder. This results in a softer cornbread that is less crumbly. I also incorporate creamed corn and butter into the recipe, adding a rich flavor and a unique touch.

Ingredients
I’ve decided to omit the egg and whole milk as instructed by the box recipe. Instead, I use carefully chosen ingredients like creamed corn, sour cream, and butter to enhance the cornbread mix. Each ingredient is essential for achieving the moist, fluffy texture and sweet, rich flavor that Southerners love in cornbread!
Measurements for the recipe can be found in the printable recipe card below.
- Jiffy Corn Muffin Mix – This serves as the base for a homemade cornbread recipe with sour cream. Jiffy ensures quick recipes while providing that classic, fluffy cornbread texture.
- Sour cream – How much should you add to Jiffy Cornbread Mix? To enhance the moisture of the cornbread, add ⅓ cup of sour cream. This secret ingredient creates an incredibly moist cornbread with a tender crumb that is hard to resist!
- Creamed corn – Creamed corn adds sweet corn kernels to the mix, enhancing the homemade feel with every bite and offering a delightful twist on comfort food.
- Butter – This ingredient adds richness, making the cornbread moist and flavorful. It’s essential to achieving the beloved taste of Southern cornbread.
- Sugar – Though optional, adding a small amount of sugar does not make the recipe overly sweet. A hint of sweetness can balance the flavors, appealing to those who prefer their cornbread slightly sweeter!

Should you let cornbread cool before removing it from the pan?
After taking the cornbread out of the oven, allow it to rest for about 5 to 10 minutes. This makes slicing it much easier. After serving, you can store any leftovers in an airtight container in the fridge for up to 5 days.
