As a result, there aren’t any unnecessary additives or preservatives you may find in a frozen dumplings store-bought version.
With intention, I also leave the shortening and cornstarch out of this recipe. And it’s not even missed (or needed)!

Ingredients for the dumplings
- 1 ½ cups of all-purpose flour
- 1 teaspoon of baking powder
- ½ cup milk
- 2 tablespoons of vegetable oil
- ½ a teaspoon of salt
Ingredients for the chicken soup
- 2 cups of chicken breast, pre-cooked, seasoned & chopped
- 2 cups of chicken broth
- 2 tablespoons of vegetable oil
- 3/4 cup of carrots, chopped
- 3/4 cup of yellow onion, diced
- 1/2 cup of celery, chopped
- 1 teaspoon of minced garlic
- 2 teaspoons of chicken bouillon
- ½ a teaspoon of dried thyme
- 1 teaspoon of salt
- ¼ teaspoon black pepper
- ¼ cup of heaving whipping cream
- ¼ cup of fresh parsley, chopped to garnish (optional)
Instructions for the homemade dumplings recipe
- Add the dry ingredients: flour, baking powder, and salt in a medium-sized bowl.
- Then stir in the milk and vegetable oil until thoroughly combined.
- Set aside this flour mixture to make the dumplings later.
Instructions for Southern soul food chicken and dumplings
- Open the Instant Pot lid and turn it on to the sauté setting.
- With the lid off, allow the sauté to heat up, and after a minute, add the vegetable oil.
- Then add the carrots, onion, and celery.
- Sauté for 2-3 minutes so that the onion and celery soften.
- Add the garlic, chicken bouillon, thyme, salt, and pepper and cook for an additional minute.
- Stir in the broth, then the cooked chicken, and turn off the Instant Pot.
- Pinch off the dough and form 1-2″ course dumpling-shaped balls by quickly rolling the dough with your hands. The dumplings will increase in size as they cook.
- Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 3 minutes.
- When the cooking time is finished, allow a natural pressure release for at least 10 minutes.
- To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.
- Then stir in the heavy whipping cream.
- Optionally, garnish with fresh chopped parsley.
- Serve Black folks’ Southern chicken and dumplings right away, and enjoy!

Absolutely, yes. But the main difference will be in the consistency of the batter.
Buttermilk is thinner than milk yet still lends itself to making beautiful dumpling dough. This has made buttermilk a popular milk substitute. It can be used in many recipes where you use milk or cream.
Can whole milk be substituted?
Yes, and even with evaporated milk. But again, the main difference will be in the consistency of the batter, so you may need to add more flour.
Does evaporated milk add a sweet taste?
A slightly sweeter taste than whole milk, but not overly sweet like condensed milk, which is not recommended for the dumplings.
Can you substitute with canned coconut milk for the same results?
Make sure the cream and coconut water are not separated, and know that you’ll get a slightly sweeter dumpling.

In my humble opinion, round dumplings always win!

When cooking dumplings, be sure to test them to see if they are done.
After removing the dumplings from the pot, use a fork to pierce them. If the center is still doughy, it’s not done.
You can eat dumplings with pleasure when the center is soft and fluffy.
Does unsalted butter change or counteract with the cooking?
Nope! This recipe doesn’t call for butter.
But suppose you’re making a chicken and dumplings recipe that does. In that case, unsalted butter is used because salt is usually added to the overall dish. Still, salted butter will have no impact on cooking this.

I was raised eating chicken & dumplings.. one of my favorite dishes; grandma c/d were the BEST, mother’s was scrumptious! I tried cooking this soothing dish, but my dumplings turned out gummy. Tried store bought dumpling… no ma’am, not for me. Tried canned biscuits – now I know better – I’m sure that burn on my neck was grandma slapping the taste out my mouth for even trying canned biscuits – horrible error. Never again. I will definitely try your recipe – I was raised eating flat dumplings, actually, they were rolled out with an aged dusted/seasoned with decades of love – on the floured counter and sliced almost like lattice strips; there was some substance to the width, but not that thick.
