Fall Classics: Southern Fried Chicken

There are certain smells that instantly tell you you’re home: Fresh cornbread coming out of the oven. Greens simmering on the stove. And fried chicken that’s just been lifted from the skillet, still crackling as it cools!

For so many of us, that smell means Sunday.

It means family gathering around the table. It means somebody sneaking a piece before dinner is officially served. And it means recipes passed from one kitchen to the next because they’re simply too good to lose.

That’s why Southern fried chicken will never go out of style.

It’s not only about crispy skin and juicy chicken—although those certainly matter!

It’s about knowing how to make the kind of fried chicken people remember long after the plates have been cleared. And if frying chicken has ever felt intimidating, this is one of those recipes where I especially want to make things easier for you.

✨ Shaunda’s Soul Food Sense: tips, truths & traditions

Tested, trusted, and passed down—just like it should be!

Over the years, I’ve tested countless techniques to make homemade fried chicken more approachable. So, here are the variables you’re probably worried about, and I’ve already solved them.

How long should the chicken marinate?

Should you season the chicken or the flour?

How do you create a crispy coating that actually stays on the chicken?

How hot should the oil be?

And how do you get juicy, seasoned chicken inside without burning that beautiful crust outside?

These are the little decisions that can make homemade fried chicken feel more complicated than it needs to be.

But no worries… because I’ve already worked through them, so you don’t have to.

My Southern fried chicken recipe walks you through the process, from seasoning and coating to oil temperature and frying. So whether you’re making fried chicken for the first time or the fiftieth, you don’t have to stand over the skillet wondering whether you’re doing it right!

❤️ Why I make it this way

Great Southern fried chicken isn’t created by one magic ingredient.

It’s built in layers.

I want the chicken itself seasoned—not just the crust. I want the flour mixture seasoned, too. And I want the oil at the right temperature so that coating can become crisp and golden while the chicken stays juicy inside.

Those details matter because a beautiful crust can’t make up for bland chicken underneath it!

And frying hotter isn’t the shortcut to crispier chicken. Oil temperature affects everything from how the coating cooks to how much oil it absorbs.

That’s why I don’t leave those decisions to guesswork.

The goal isn’t simply to teach you to fry a piece of chicken; it’s to give you enough confidence in the method so you know what you’re looking for while you cook.

Crispy, golden, and seasoned all the way through. It’s the Southern classic that makes any dinner feel like Sunday dinner.
