Great Southern fried chicken isn’t created by one magic ingredient.

It’s built in layers.

I want the chicken itself seasoned—not just the crust. I want the flour mixture seasoned, too. And I want the oil at the right temperature so that coating can become crisp and golden while the chicken stays juicy inside.

Those details matter because a beautiful crust can’t make up for bland chicken underneath it!

And frying hotter isn’t the shortcut to crispier chicken. Oil temperature affects everything from how the coating cooks to how much oil it absorbs.

That’s why I don’t leave those decisions to guesswork.

The goal isn’t simply to teach you to fry a piece of chicken; it’s to give you enough confidence in the method so you know what you’re looking for while you cook.
