How to make carrots in the Instant Pot

These brown sugar-glazed carrots can be made in under 5 minutes using the Instant Pot’s pressure cooker function. Simply add the liquid broth, butter, sugar, herbs, and spices to the pot. Then, close the lid and walk away. In only a few minutes, you have this part of dinner complete!

  1. Remove the tops of the carrots and lightly score their skin. 
  2. Add all the ingredients to the stainless steel inner pot.
  3. Pressure cook and then allow for a natural pressure release for at least 2 minutes.
  4. Once done, open the Instant Pot lid, serve, and enjoy!

Reheating glazed carrots

However, if you’re like me and want to make an easy one-pot-drop and simply walk away, add the carrots along with a small amount of water to the Instant Pot. Close the lid and set the pot to the ‘keep warm’ setting for about 10 minutes, or until the carrots are heated through!

Ingredients

  • 8 carrots skin on, 8 whole organic carrots or 4-5 large carrots
  • ½ cup chicken stock (Replace with water or vegetable stock to make vegetarian-friendly)
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dry thyme
  • 4-5 sprigs fresh thyme
  • 1 tablespoon unsalted butter

Instructions

  • Remove the tops of the carrots and lightly score their skin, being careful not to cut the carrots into chunks.
  • Add the carrots to the Instant Pot stainless steel inner pot.
  • Pour the liquid stock over the carrots.
  • Add the seasonings (brown sugar, salt, black pepper, dry thyme, fresh thyme sprigs) and butter on top of the wet carrots.
  • Close the Instant Pot lid (make sure the valve is up in the sealing position) and pressure cook on high for 4 minutes.
  • When the cooking time is finished, allow a natural release of pressure for at least 2 minutes.
  • To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable, then serve and enjoy!

    1. Yes, super easy & delicious is always the mission! You can try oregano if you don’t have thyme – or simply leave it out if you don’t have it. The carrots will still glaze nicely.
