Sautéing is where you add butter, oil, broth or water, then put your veggies into the inner pot for browning or cooking quickly over fairly high heat. In the Instant Pot, you sauté with the lid off. 

When sautéing, you can also include seasonings like thyme, cumin, pepper, or paprika, depending on the type of dish you want.

How to make Instant Pot carrots

Instant pot carrots are a perfect side dish for your next dinner party or just an easy weeknight meal for you and the family! 

This recipe is absolutely a crowd-pleaser for kids and adults alike. 

All you need is simple ingredients from your pantry and one pot for this dish to come together quickly. 

Ready for this nutritious side dish? Let’s get started.

 

Carrots In The Instant Pot Ingredients

 

Ingredients

  • 6-8 whole organic carrots or 4-5 large carrots, skin on 
  • ½ cup of chicken stock (replace with ½ cup of water to make vegan friendly)
  • ½ cup of brown sugar (replace with 1 teaspoon of cinnamon for keto)
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper 
  • ½ teaspoon of dry thyme 
  • 4-5 sprigs of fresh thyme 
  • 1 tablespoon of unsalted butter

Instructions

  1. Cut off the carrot tops and save them to make an easy, yummy carrot greens chimichurri!
  2. Lightly score the skin of the carrots, being careful not to cut the carrots into chunks.
  3. Add the carrots to the Instant Pot stainless steel inner pot.
  4. Pour the chicken stock over the carrots.
  5. Add the seasonings (brown sugar, salt, black pepper, dry thyme, fresh thyme sprigs) and butter on top of the wet carrots.
  6. Close the Instant Pot lid (make sure the valve is in the sealing position – up) and pressure cook on high for 4 minutes.
  7. When the cooking time is finished, allow a natural release of pressure for at least 2 minutes.
  8. To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.
  9. Serve and enjoy!

How do you quick-release your Instant Pot safely?

When you are finished cooking in your Instant Pot and want to release the pressure, there is a quick-release method and a natural release method

The quick-release method involves turning the knob on top of the lid counterclockwise until it can’t go any further (positioning the knob/valve down). When you do this, steam will release from the knob/valve on top of the Instant Pot.

The natural release method involves waiting for approx 10-15 minutes (depending on the recipe) after the pressure cooking time has reached zero before releasing any remaining pressure manually.

      Yes, super easy & delicious is always the mission! You can try oregano if you don’t have thyme – or simply leave it out if you don’t have it. The carrots will still glaze nicely.
