Ingredients for brown sugar glazed carrots

  • 6-8 whole organic carrots or 4-5 large carrots, skin on 
  • ½ cup of chicken stock (replace with ½ cup of water to make vegan friendly)
  • ½ cup of brown sugar (replace with 1 teaspoon of cinnamon for keto)
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper 
  • ½ teaspoon of dry thyme 
  • 4-5 sprigs of fresh thyme 
  • 1 tablespoon of unsalted butter (or vegan butter)

 

Instructions for Black folks brown sugar glazed carrots

  1. Cut off the carrot tops and save them to make an easy, yummy carrot greens chimichurri!
  2. Lightly score the skin of the carrots, being careful not to cut the carrots into chunks.
  3. Add the carrots to the Instant Pot stainless steel inner pot.
  4. Pour the chicken stock over the carrots.
  5. Add the seasonings (brown sugar, salt, black pepper, dry thyme, fresh thyme sprigs) and butter on top of the wet carrots.
  6. Close the Instant Pot lid (make sure the valve is in the sealing position – up) and pressure cook on high for 4 minutes.
  7. When the cooking time is finished, allow a natural release of pressure for at least 2 minutes.
  8. To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.

    1. Yes, super easy & delicious is always the mission! You can try oregano if you don’t have thyme – or simply leave it out if you don’t have it. The carrots will still glaze nicely.
