  • 6 oz. of whipped cream cheese
  • 12 oz. of salsa (your favorite kind)
  • 1 cup of black beans
  • 1 cup of corn
  • 1 teaspoon of salt
  • 12 oz. of Mexican shredded cheese
  • ¼ cup of fresh chopped cilantro to garnish

Instructions for savory and sweet pumpkin dip in the Instant Pot

  1. Remove the Instant Pot lid and pour the pumpkin, cream cheese, salsa, black beans, corn, and salt into the stainless steel inner pot.
  2. Stir to mix the ingredients.
  3. With the Instant Pot lid off, turn on the slow cook setting for 5 minutes. (When the time is up, you’ll know when to add the cheese for the next step).
  4. After the 5-minute timer is up, stir in the cheese and turn the pot back on to slow cook for 10 more minutes.
  5. When the cooking time is finished, transfer to a serving bowl or keep the dip in the Instant Pot on the ‘keep warm’ setting.
  6. Garnish with fresh chopped cilantro and wonton strips (optional).
  7. Serve this pumpkin dip recipe warm with tortilla chips – and enjoy!

I recommend using an already softened whipped cream cheese for this recipe. However, if you don’t have that type on hand, the cream cheese will still soften in the Instant Pot because it will be on the slow cooker setting.

 

Can this no-bake pumpkin dip be frozen?

Yes, technically, leftovers can be frozen. There may be some differences in the texture and creaminess of the pumpkin dip, but that won’t affect its taste!

If you plan to keep the pumpkin dip for a month or less, freezing is an option. It’s essential to transfer your pumpkin dip into an airtight container before placing it in the freezer for best results!
